BeschreibungFusel oil, refined, has a disagreeable odor. An appreciable percentage of fusel oil in a liquor has an adverse effect, while trace amounts are necessary for the characteristic flavor. This is produced as a by-product in the fermentation of starch- or sugarcontaining materials (potatoes, grapes, beetroots, grain); purified by rectification.
VerwendenFlavoring agent, solvent, source of amyl alcohols. Fuscl oil is used in certain artificial essential oils. It finds usc in fivor compositions, mainly in imitation Wine, Cognac, Liqueur, Brandy, Rum, Arak, etc. The concentration used may vary from 2 to 30 ppm in the finished product, but can be as high as 300 ppm in chewing gum.
