解説炭酸アンモニウム,1水和物(NH4)2CO3･H2Oのみが知られ，無水和物は得られていない。市販の炭酸アンモニウム(俗に炭安という)は，炭酸水素アンモニウムNH4HCO3とカルバミン酸アンモニウムNH4OOCNH2との混合物または複塩で，炭酸カルシウムと硫酸アンモニウムの混合物を加熱し，昇華物として得られる弱いアンモニア臭のある白色の塊。これを濃アンモニア水に溶かし，冷所に数日放置すると，1水和物の無色透明の光沢ある斜方晶系結晶が析出する。株式会社平凡社 世界大百科事典 第２版について 情報

使用Ammonium Carbonate is a dough strengthener, a leavening agent, a ph control agent, and a texturizer. it is prepared by the sublima- tion of a mixture of ammonium sulfate and calcium carbonate, and occurs as a white powder or a hard, white translucent mass.

一般的な説明A colorless crystalline solid or a white powder with a strong odor of ammonia. Noncombustible. The primary hazard is the threat to the environment. Immediate steps should be taken to limit spread to the environment. Used to make other ammonium compounds, in pharmaceuticals, in food processing.

使用用途炭酸アンモニウムは、各種アンモニウム塩の製造原料、分析用試薬、緩衝剤、中和剤、pH調整剤となるほか、制酸剤など医薬品としても用いられています。 また、アンモニウムイオンによる刺激臭から、必要なときに砕いて使用する気付け薬として用いられていました。また、baker's ammonia (パン屋の)としても知られ、かつては、ふくらし粉の用途にも使われていました。 その他、発泡剤や (カゼインの可溶化剤) なども用途の1つです。

製造方法Ammonium carbonate is obtained by passing carbon dioxide into aqueous ammonia solution in a column or tower. Ammonia, carbon dioxide and water vapor are distilled and the vapors condensed into a solid crystalline mass. It also may be prepared by subliming a mixture of ammonium sulfate and calcium carbonate.
