レブリン酸．CH3COCH2CH2COOH．典型的なγ-ケト酸．実験室的には，デンプンあるいは砂糖を塩酸と煮沸すると得られる．工業的には，セルロースを無機酸と加熱すると得られる．無色の板状あるいは葉状結晶．融点33～35 ℃，沸点245～246 ℃，138 ℃(1.3 kPa)．d417"1.1447．nD16"1.442．K 2.4×10－5(25 ℃)．水，エタノール，エーテルに易溶，ヘキサンに不溶．熱にかなり安定であるが，長時間加熱すると分子内で縮合して図の不飽和ラクトンになる．光によっても分解するので，光を断って保存する．ナイロン，合成ゴム，プラスチック，そのほかの有機合成原料に用いられる.
用途
食品添加物アセチルプロピオニルはバター風味の強化に使用されることが多いですポップコーンマーガリン菓子パンなど豊かな風味付けが求められる食品に添加されます香料その甘い香りと風味から香水や化粧品さらには洗剤などの日用品にも香料として利用されています電子タバコのリキッドアセチルプロピオニルは電子タバコのリキッドにも使用され独特の甘い味と香りを提供しますただし健康への影響が懸念されることもあるため使用には注意が必要です

Levulinic acid has a tart, whiskey taste. It may be synthesized by the action of more or less concentrated HCL on sucrose, glucose, or fructose; hence, its reported presence in caramels.

Levulinic acid may be used as an analytical reference standard for the quantification of the analyte in the following:Soy sauce using liquid chromatography coupled to mass spectrometry (LC–MS).Liquid food samples using gas chromatography with flame ionization detection (GC-FID).

使用用途
レブリン酸は、毛髪の酸熱トリートメントとして使用されています。毛髪にレブリン酸を含むトリートメントを施し、高温アイロンの熱をかけると、毛髪内でレブリン酸が架橋を形成可能です。レブリン酸の架橋によって、毛髪が疎水性になり、毛髪内に余分な水分が入りにくくなります。ハリやコシが出るため、トリートメント効果が得られます。 また、レブリン酸は合成ゴム、プラスチック、などさまざまなポリマーの原料にも利用可能です。さらに、タバコにも使われています。煙中のニコチンを送達し、神経受容体へニコチンを結合させます。光線力学療法では、光感受性物質に使用可能です。
