フーゼル油 (Fusel oil) とは、糖類やでんぷんを発酵してを製造する際に、得られる副産物の1種です。 具体的には、エタノールを分留して精製する際に高沸点の揮発性成分として得られる留分のことを指します。CAS番号は8013-75-0です。フーゼル油は混合物であり、その成分は、発酵原料や酵母の種類、発酵方法、蒸留方法などによって異なります。各成分はそのどれもがエタノールよりも沸点が高い物質です。 主な成分としては、 (S)-2-メチル-1-ブタノール、3-メチル-1-ブタノールなどの炭素数5のアルコールが挙げられ、残りはイソブチルアルコールやn-プロピルアルコールといった、その他の高級アルコールなどが含まれています。 なお、フーゼル油は水に溶けにくく比重が水よりも軽いため、蒸留酒を作った際に油滴として分離し酒を濁らせたり表面に浮いてくることもあります。また、フーゼル油は、独特の臭気をもっているため、フーゼル油の含有率が高い酒類は、飲料に適さないとされています。

This is produced as a by-product in the fermentation of starch- or sugarcontaining materials (potatoes, grapes, beetroots, grain); purified by rectification.
使用
Flavoring agent, solvent, source of amyl alcohols. Fuscl oil is used in certain artificial essential oils. It finds usc in fivor compositions, mainly in imitation Wine, Cognac, Liqueur, Brandy, Rum, Arak, etc. The concentration used may vary from 2 to 30 ppm in the finished product, but can be as high as 300 ppm in chewing gum.

使用用途
フーゼル油は、アミルアルコール (3-メチル-1-ブタノール) やtert-アミルアルコール (2-メチル-2-ブタノール)が工業的に生産されるようになるまでは、これらのアルコールの主要な供給源として利用されていた物質です。 化学処理や蒸留によって精製されたフーゼル油は、アミルアルコールがほとんどの割合を占める混合物となります。そのため、そのまま使用するか、あるいは酢酸エステルにして、アルキド樹脂・ニトロセルロース等の合成樹脂類や塗料などに、高沸点溶剤として用いられています。 フーゼル油を分留し、含有成分を分離することによって得られた各成分は、香料や溶剤として用いられています。フーゼル油には独特の臭いがあり、酒類にとって好ましくありませんが、微量含まれている場合には、香気成分として役立っています。
