概要
Alliin zwitterion is an L-alpha-amino acid zwitterion that is allin in which a proton has been transferred from the carboxy group to the amino group. It is the major species at pH 7.3. It has a role as an antioxidant, an antimicrobial agent, a neuroprotective agent, a plant metabolite and a cardioprotective agent. It is a tautomer of an alliin.

解説S-allylcysteine sulfoxide．C6H11NO3S(177.22)．ニンニクAllium sativumの球根に含まれている一種のアミノ酸．球根のメタノール抽出液から分別沈殿で得るか，L-システインをアリル化後，過酸化水素で酸化すると得られる．針状結晶．融点164～166 ℃(分解)．[α]21D＋67.7°(水)．水に易溶，有機溶媒に不溶．アリインが酵素アリイナーゼの作用で分解して，ニンニク臭をもつ黄色の液体，アリシン(allicin，S-2-propenyl 2-propene-1-sulfinothioate)を生成する．アリシンは，C6H10OS2(162.28)．d2141.112．n20D1.561．水に微溶，エタノール，エーテル，ベンゼンに可溶．ニンニクの抗菌成分で，殺菌剤として用いられる．"森北出版「化学辞典（第2版）
説明Alliin (S-allyl cysteine sulfoxide) is an organic sulfur-containing product derived from the amino acid cysteine. It is the precursor of thiosulfinates, which are responsible for the characteristic pungent flavours of Allium species. It is an L-alanine derivative in which one of the methyl hydrogens of L-alanine has been replaced by an (S)-allyl sulfinyl group. It has a role as a plant metabolite, an antioxidant, a cardioprotective agent, a neuroprotective agent and an antimicrobial agent. It is a non-proteinogenic alpha-amino acid, an L-cysteine derivative, an L-alanine derivative, a sulfoxide and an olefinic compound. It is a tautomer of an alliin zwitterion.
