Procedure
Into a 2 liter autoclave are charged 2-methyl-2-pentenal (196 grams), acetone (580 grams) and zinc acetate dihydrate. The reaction mixture is heated at 170°-180° C. for a period of 5 hours. After filtering the catalyst the organic layer is washed with 10% salt solution. Distillation and bulking fractions 4-8 gives 80.3 grams of product, B.P. 91°-98° C. at 5-7 mm Hg. pressure. The bulked fractions or separate fractions are useful for augmenting or enhancing the aroma or taste of the foodstuff.
