D-arabitol was dissolved in 0.1M phosphate buffer solution(pH 6.0) to a final concentration of 5% (w/v), and 5 ml each of the solution was dispensed in a test tube. To this reaction mixture were added the bacterial cells prepared in the same manner as in Example 6 in a wet weight of about 10% (w/v) and 2% (w/v) of calcium carbonate, and a reaction with shaking was run at 30° C. After 6 hours' reaction, 5% (w/v) of various sugars and sugar alcohols were added as shown in Table 2 for further reaction. After the reaction was continued for 27 hours, the bacterial cells were removed by centrifugation and then the amount of xylitol produced was determined by HPLC. As shown in Table 2, an increase in the amount of xylitol produced was recognized by addition of various sugars and sugar alcohols.
