Reaction Steps
Activity: The inventive sorbitol dehydrogenase catalyzes dehydrogenation oxidation of D-sorbitol in the presence of NAD+ to produce D-fructose, and also catalyzes the reverse reaction which reduces D-fructose in the presence of NADH to produce D-sorbitol and NAD+.
