60.4 g of the immobilized Escherichia coli preparation obtained in paragraph (1) are packed in a column (4 cm in diameter and 8 cm in height), and incubated at 37° C. for 48 hours. After incubation, the immobilized preparation shows an aspartase activity of 278, 422μ moles/hr. Then, 1000 ml of an aqueous 1 M ammonium fumarate solution (pH 8.5) containing 1 mM magnesium chloride are passed through the column at 37° C. at a flow rate of 50 ml/hr. The effluent is adjusted to pH 2.8, and the crystalline precipitates are collected by filtration. 122 g of L-aspartic acid are obtained.
