Reaction Steps
2,3,4,3',4'-penta-O-acetyl sucrose (2 g) was dissolved in methyl isobutyl ketone (20 ml) and acetic acid (1 ml) was added. The reaction of the mixture was heated under reflux (about 126°) for 3 hours. On cooling, the product crystallized to give a yield of 1.5 g (75%) of 2,3,6,3',4'-penta-O-acetyl sucrose.
