Procedure

In another experiment, various sucrose/water mixtures were heated to boiling point. Reservatrol was added to each sucrose/water solution. On heating the mixtures to about 90° C., the mixtures formed thick yellow syrups, similar to mixtures of resveratrol and 90% fructose/10% dextrose m/m syrup. On cooling, resveratrol/sucrose/water mixtures formed crystalline solids composed of small crystals; in contrast, the sucrose/water solution formed a crystalline solid composed of large crystals. All resveratrol/sucrose/water mixtures failed to dissolve resveratrol in a similar fashion due to crystallization.
