10 g of 3-(4-hydroxyphenyl)pyruvic acid and 50 ml of ethanol were charged to a pressure reactor to form a solution, and 1.0 g of Raney nickel was added thereto. The atmosphere was displaced with hydrogen, and the mixture was stirred at 70° C. under a hydrogen pressure of 30 kg/cm2 for 0.5 hour. After completion of the reaction, the reaction mixture was filtered to remove the catalyst, and the filtrate was concentrated under reduced pressure to give 8.7 g of 3-(4-hydroxyphenyl)lactic acid as colorless crystals.
