Reaction equation
[C:1]([OH:6])(=O)[CH:2]([CH3:4])[OH:3].[OH2:7]>>[CH2:4]([OH:7])[C@@H:2]([OH:3])[C@H:1]([OH:6])[C@H:4]([OH:7])[C@@H:2]([OH:3])[CH2:1][OH:6]Participants

Procedure
It appeared that the fatty acid soap could be well acidified with 3-5 parts by weight of lactic acid per 100 parts by weight of reaction product. In example XXIII poorly water-soluble crystals of non-esterified dulcitol, which formed in the first water extraction, are eliminated by filtration.
