解説cis-ジャスモンはジャスミン油の主香成分で，ネロリ，ペパーミントなどの精油に広く存在する．沸点146 ℃(3.6 kPa)．d224 0.9437．n22D 1.4979．水に不溶，エタノールや油類に可溶．工業合成によりジャスミン系，フローラル系調合香料に用いられるほか，フレーバーとしても用いられている．LD50 5000 mg/kg(ラット，経口)ジャスミン油は酢酸ベンジル(65％)，d‐リナロール(15.5％)，ジャスモン，インドール，酢酸リナロール，ネロール，ベンジルアルコール，ゲラニオールなどからなる。芳香の主体はジャスモンjasmoneで5員環の不飽和ケトンである。

説明This has a jasmine odor.

天然物の起源The cis-form is reportedly occurring naturally; it is found in the essential oils of jasmine (3%), jonquil, and Pittosporum glabratum, in neroli oil, in peppermint (Mentha piperita), and in bergamot, apricot, raspberry, cinnamon, corn mint and spearmint oils, beer, tea, soybean and heated beans.

使用Traces, often mere fractions of one percent in a perfume oil may introduce just that wanted warmth and deep floral note almost unobtainable with other chemicals.Jasmone's flavor power is even greater. Concentrations of about 1 ppm have perceptible effect in many fruit flavors, while naturally, concentrations in Mint flavors are higher.
