解説アンゲリカ酸，チグリン酸のトランス形異性体．セリ科ヨロイグサ属Angelicaの根に存在し，またテルペン類などのなかにエステルとして含まれる．2-ヒドロキシ-2-メチル酪酸の脱水反応によって得られる．無色の単斜結晶．融点45 ℃，沸点185 ℃，88～89 ℃(1.3 kPa)．0.954．1.4434．水に難溶，エタノール，エーテルに可溶．不安定で加熱または硫酸と処理するとチグリン酸に異性化する．香料，調味料などに用いられる．

用途カルボキシル基の隣に炭素-炭素二重結合を持ち、チグリン酸のシス?トランス異性体である。揮発性がある無色の結晶で、刺激性のある酸味とにおいを持つ。以前は鎮静剤として用いられていた。
