Procedure
12.4 g of the 3-O-ethyl-isopropylidene ascorbic acid obtained in Example 1 was dissolved in 100 ml of distilled water, to which 10 ml of 2N hydrochloric acid solution was added. The mixture was reacted at 60° C. for 2 hours and concentrated under reduced pressure to give an adhesive liquid product. Ethanol was added to the prepared liquid product, which was then concentrated to give crude crystalline 3-ethyl-ascorbic acid. The crude crystalline 3-ethyl-ascorbic acid was re-crystallized in ethylacetate/ethanol (8:2) to give 8.6 g of white crystalline 3-O-ethyl-ascorbic acid (yield: 84.3%).
