Phosphate → D-(-)-Fructose
Reaction equation
P([O-])([O-])([O-])=O.[O:6]=[CH:7][C@H:8]([C@H:10]([C@@H:12]([C@@H:14]([CH2:16][OH:17])[OH:15])[OH:13])[OH:11])[OH:9]>O>[OH:6][CH2:7][C:8]([C@H:10]([C@@H:12]([C@@H:14]([CH2:16][OH:17])[OH:15])[OH:13])[OH:11])=[O:9]Participants

Procedure
Into 0.5 ml of a 0.1M phosphate buffer (pH 7.0) containing 0.2M mannose dissolved therein is added a suitable amount of the enzyme, the total volume is made up with water to 1.0 ml, and the reaction mixture is incubated at 50° C. The amount of fructose formed is determined by the cysteine-carbazole method. The amount of the enzyme forming 1 micromole of fructose per one minute under this condition is defined as one unit.
