1.45 grams of trisodium citrate dihydrate in 20 ml of distilled water was added to 18,900 grams of xanthan broth to give an equivalent citric acid concentration of 50 ppm; i.e., citric acid concentration of 50 ppm was prepared by adding 77 ppm trisodium citrate dihydrate. The citric treated xanthan sample in a 5 gallon polyethylene carbuoy was then vigorously agitated in a New Brunswick rotary shaker for 1 hour to insure proper mixing.
