Sodium Hydroxide → L-Malic Acid
Reaction equation
[C:1]([OH:8])(=[O:7])/[CH:2]=[CH:3]/[C:4]([OH:6])=[O:5].[NH4+].[OH-:10].[OH-].[Na+]>>[C:1]([OH:8])(=[O:7])[C@H:2]([CH2:3][C:4]([OH:6])=[O:5])[OH:10]Participants

Procedure
Cell mass grown according to example C is suspended in 16 liters of a 240 g/l solution containing fumaric acid (neutralized with NH4OH and NaOH in the molar ratio of 2 to 1). The concentration of the cell mass in the fumaric acid solution amounts to 6 g/l (calculated as dry mass). After 24 hours of incubation, 234 g of L-malic acid per liter of fermentation liquid is produced.
